Top Round brings revolutionary roast beef to the Park on the Las Vegas Strip

When a new hockey season arrives in the fall, Vegas Golden Knights fans will have a new pregame meal option to consider among the tasty bites available in the vicinity of New York-New York and Park MGM. I highly recommend you scout the sandwich situation ahead of time with a trip to the Strip to sample Top Round; in my initial assessment, it already rivals Shake Shack’s burgers and the brats at Beerhaus for hand-held snack satisfaction.

Top Round was founded in LA by a group of chefs and restaurateurs hailing from the Eastern and Midwestern parts of the country, where simple sandwich shops and beloved bar foods are a bigger deal. The Vegas version opened in early June in the former Bruxie chicken and waffles quick-serve spot at the Park, and the concise menu is focused on slow-cooked roast beef or hand-breaded chicken sandwiches, crispy wings and tenders, hot dogs, salads, fries and shakes.

The well-assembled Beef & Cheese ($12) seems like the obvious starting point, but skip ahead to the rich Horse & Hole sandwich ($13) and revel in umami from roasted mushrooms, horseradish cream, Provel cheese and a pile of that savory, sliced beef on a sesame bun. You’ll immediately notice the care given to each ingredient, the distinguishing factor at Top Round. If you can’t get enough meat, get the OG ($10) and add two more ounces for $3; you’ll never even think about going to Arby’s again.

Just so you know, we’re also considering the home-made Cheese Whiz-covered tater tots ($5) with a pistachio gelato shake ($8) as the possible victory celebration when the Knights beat Chicago in the home opener at the Fortress on October 13.
