La Popular CDMX is set to open its third U.S. location at the Palms this summer, a partnership with Mexico City’s Grupo Carolo and California-based Eureka! Restaurant Group. New York restaurant brand Rosa Mexicano is also planning a Las Vegas arrival, set to open at the Miracle Mile Shops at Planet Hollywood in late 2023. Sandwich spot Karved is set to open its second location June 9 at the Gramercy. The family-owned eatery will be celebrating with free fries, local artists, face painting, goodies from local bakery Whiskful Thinking Cakes and more from noon until 4 p.m. For more info, visit karvedlv.com.

The highly anticipated Salt & Straw ice cream shop at UnCommons is set to open on June 16. In addition to offering its popular signature flavors, the store will also serve the brand’s newly launched Upcycled Food Series menu throughout the month of June, five flavors partnered with brands reducing food waste in the U.S. For example, the cacao pulp and chocolate Stracciatella gelato is a collaboration with Blue Stripes, the cacao brand founded by chocolatier Oded Brenner, and it’s made using the whole cacao pod. Stack at the Mirage will host an Angel’s Envy whiskey pairing dinner on June 17 at 5 p.m., with the menu including whiskey-infused lobster bisque, bourbon-braised short ribs and Stack’s signature surf and turf. Tickets are $155 per person and reservations are available at sevenrooms.com.

RPM Italian at the Forum Shops at Caesars will host its Sicily Summer wine dinner on June 21 at 7 p.m., featuring a four-course dinner paired with Sicilian wines. The menu includes passed appetizers, roasted porchetta with Sicilian artichokes and a traditional Torta Savoia dessert. Tickets are $85 per person and reservations are available at rpmrestaurants.com.

You only have a few more days to experience the wildly popular Mermaid Shake ($12) at Black Tap, a strawberry and blueberry shake topped with whipped cream and mermaid sprinkles created in conjunction with the release of Disney’s “The Little Mermaid.” It’s on the menu through June 11 at the Venetian burger and bar spot.

Naxos Taverna at Red Rock Resort has launched a three-course spring prix fixe menu for $55 per person available daily from 4 to 6 p.m. Among the dish options are green chickpea falafel with tahini yogurt, kataifi-wrapped prawns, chicken keftedes, Faroe Island salmon, charcoal grilled skirt steak and Royal Dorade Lavraki grilled with lemon and sea salt.

The Underground speakeasy and distillery at the Mob Museum has launched its new Huckleberry Hideout Moonshine, a 60-proof offering “offering sweet, juicy, tart and fruity notes with a dry finish on the palate.” Inspired by bootleggers distilling across the Pacific Northwest, the new flavor starts with the Underground’s award-winning Signature Moonshine as a base then incorporates 100% fresh huckleberry concentrate.
