Palazzo amps up fall Festivino with Master Chefs of France

The Venetian and Palazzo have been hosting Festivino, a wine-centric celebration of harvest season, for five years now, but this year’s event will be special.

This past spring, the twin resorts and executive chef Olivier Dubreuil hosted the 59th General Assembly of the Maitres Cuisiniers de France, or Master Chefs of France, and the elite culinarians naturally had a great time in Las Vegas. They learned all about the food and beverage events planned throughout the year, and “they said they’d love to be a part of Festivino this year, and help take it to another level,” said Sebastien Silvestri, Venetian’s vice president of food and beverage.

Now, in addition to 10 different world-class winemakers each showcasing a few different wines, this week’s event will offer small bites from 10 different Master Chefs, including Las Vegas residents Dubreuil, David Werly from Mandarin Oriental, Claude Le Tohic from Joël Robuchon and Steve Benjamin from L’Atelier.

What will they be serving? How about seared tuna loin with tomato caramel and mango-saffron vinaigrette, or duck foie gras crème brûlée with rhubarb meringue, or confit of lamb shoulder, or lobster cappuccino, or quail stuffed with duck merguez? The delicate, delicious food will be paired with a different station as guests move through the Palazzo’s Waterfall Atrium, and there’ll be champagne, too. In the past, Festivino has focused on wine from one region, but this year’s event will be a bit more open.

Other Master Chefs and master sommeliers participating include Frederic Castan, Jean-Louis Dumonet, Jerome Ferrer, Bernard Liberatore, Nico Romo and Claude Godard.

Venetian has certainly stepped up its F&B event game in recent years and this version of Festivino follows suit.

“There are a lot of food and wine events in town but I’m not sure if they’re all presented for the right reasons,” Silvestri said. “I want everything we produce to be world class, to be the best. You have to forget about food costs when you do things like this, because you’re showing your guests what you’re capable of doing.”
