Chef Nicole Grimes is coming back to the Strip as sous chef at Border Grill.

The second local Border Grill restaurant is slated to open in October at the Forum Shops at Caesars, and its opening sous chef is a familiar face. Nicole Grimes, who was part of the opening team at Rao’s at Caesars Palace, will return to the Strip after a stint opening Rao’s in LA. Chris Keating will be executive chef, as he is currently overseeing Border Grill’s Mandalay Bay location, and rounding out the Forum Shops staff will be Agustin Guevara as executive sous chef and Jennifer Holley as general manager.

Delmonico Steakhouse at the Venetian and Templeton Rye are joining forces for an evening of pork and whiskey delights on September 27. Delmonico will offer five special menu items created by chefs Ronnie Rainwater and Sean Roe in participation with the Templeton Rye Heritage Pork Project, drool-inducing dishes including house-made head cheese with wild arugula and pickled mustard seeds ($16), boudin boulettes with caramelized onion emulsion ($15) and butterscotch bacon pudding with candied bacon and bacon shortbread ($12). Mixologist Max Solano has created two unique libations to complement the food, the Mesquite Manhattan and the Pomme & Swine. Pig out, indeed.

October means Philly cheese steak burger time at KGB.

KGB: Kerry’s Gourmet Burgers at Harrah’s is serving up some fall-influenced seasonal specialties, including September’s turkey burger with havarti cheese, pecan wood smoked bacon, roma tomatoes and Kalamata aioli; October’s Philly cheese steak burger with American cheese and white cheddar cheese sauce, thinly sliced steak, peppers, onions and mushrooms; and November’s Thanksgiving turkey burger with pea sprouts, turkey stuffing, gravy, cranberry sauce and mayo. Accompanied with fries, all burgers are $14.

Mint Indian Bistro doesn’t think you can handle the heat. The Flamingo Road restaurant just east of the Strip is launching Inferno Curry Challenge Month in October, when anyone who takes down Mint’s signature sizzling dish wins a $50 gift card, entry into a drawing to win complimentary dinner entrees for a year and a spot on the Wall of Fame. Since the eatery opened six years ago, more than 1,600 brave souls have attempted to finish the Inferno—after they signed the mandatory waiver—and only 16 diners have pulled it off. Do you have what it takes?
