A former professional snowboarder, the Korean-born chef of Yellowtail at the Bellagio has done stints with master chefs Nobu Matsuhisa and Masaharu Morimoto, appeared on Iron Chef America and prepared dinners at the James Beard House. It all boils down to a menu of classic and nouveau Japanese cuisine that tastes as good in the desert as it would on the slopes.
