“The crust is the queen of the whole thing, the main ingredient. We want people to actually taste it, otherwise it would become like a container for toppings, not like a pizza anymore. If you come as a first-time customer, I say just get the basic Margherita—let’s taste the crust, the dough, the tomato and mozzarella. I’m the boring person who gets always the Margherita, so you can taste the goodness of the pizza.”
