Chef Ming Yu shares his favorite spots for Japanese, Chinese and Italian

Wing Lei executive chef Ming Yu oversees a diverse menu for Wynn Las Vegas patrons, drawing upon a variety of Far Eastern cuisines. Here are a few of his favorite restaurants in town.

Japanese ramen: I-Naba (3210 S. Decatur Blvd. #104, 220-6060) “It’s amazing” says Yu, who previously worked at noodle shops at Bellagio and the Mirage. “My favorite dish there is the beef udon ramen. Noodles are very important and theirs are handmade and very tasty. Many restaurants use dry noodles or just don’t make quality noodles, but I-Naba’s are fresh. You can taste that.”

Chinese: Joyful House (4601 Spring Mountain Road, 889-8881) “I go there at least four or five days a week,” Yu says. “I love any of their live seafood—winter prawn or steamed fish are always good choices. But champagne crab is my favorite. (It’s also known as firecracker or typhoon shelter crab, but champagne crab is just easier to remember.) It’s very heavy on fried garlic—it’s got a lot of garlic—and also has jalapeño, onion and XO sauce. It’s a very strong dish.”

Italian: Ferraro’s (4480 Paradise Road, 364-5300) “When I have a break after being very busy and I want some wine and some good food, I’ll go there. It’s a nice place—nice wine and nice food. My favorite pasta is the wild boar pasta [porcini pappardelle con ragu de cinghiale]. It tastes very good, and it’s not like at other Italian restaurants where they use too much cheese or too much oil. I also enjoy a good caprese salad, and they have one.”
