Bobby Q Grille, now open in Spectator’s Bar & Grill on Durango and Flamingo, is the result of worlds colliding. Bars leasing out kitchens has been a successful model for Valley faves like Naked City Pizza Shop at Moon Doggies and Carlos’ Kitchen inside Charlie’s Bar, while food truck operators transitioning to brick and mortar remains a work in progress. Bobby Q Grille is both.

The menu—by Bobby Wilkinson, owner of Ben’s BBQ and Sin City Wings food trucks—includes barbecue and wings, but the Southern stuff is the most intriguing, no surprise since the Mississippian credits his cooking chops to his mom.

Tough to say if the Best Fried Pickles Ever ($6) really are, but they’re easily the best in town. Wilkinson uses chips instead of spears, balancing pickle and breading in every perfectly fried morsel. The Southern Deviled Eggs ($5) are different from the standard version, due to their heavy use of Comeback sauce, a remoulade variant native to the Deep South. Another regional highlight, the Big Easy Butter Burger ($9), delivers just what it promises—butter on the patty. It’s as delicious as you’re imagining, claiming a spot among my favorite Valley burgers.
