Jarod Upham didn’t plan on becoming the Hummus King of Las Vegas, but three months after launching 86’d Eats, he’s doing a mighty fine Abe Froman impersonation.

The 2007 Le Cordon Bleu graduate, who had stints with AquaKnox and the Cannery’s Waverly’s Steakhouse prior to embarking on his own path, is a former Marine who previously worked as a mechanic and truck driver—not the path you’d expect from a hummus magnate. Yet he’s selling almost 200 containers a day, available at most of the Valley’s farmer’s markets.

His best seller is the plain roasted garlic variety, though his sublime basil/spinach sells well, and his roasted red beet is developing its own cult following. My favorite: the bright-orange chipotle/cilantro, a must-get on my weekly market visits. It sells for $6 per eight-ounce container, and Upham, the sole recipe holder, insists on mixing up every batch himself. Which goes to show, it’s hard work becoming Hummus King.
