The usual-suspect bars we frequent for service from stellar bartenders might not be where you’ll spot them drinking off the clock. They’re probably upstairs at RM Seafood, sipping an amaro straight or letting Nathan Greene and his crew sling “Bartender’s Choice” with premium spirits and super-fresh ingredients.
