Not that you need an excuse for poppin’ bottles of bubbly in Las Vegas, but a new rock-star Champagne lounge adorned with some of Elton John’s personal photography collection is most certainly a good one. Fizz Las Vegas at Caesars Palace, a partnership between John’s husband, David Furnish, and local nightlife group Marvel Management and Marketing (aka M3), has opened just in time to ring in 2014. And what should be in your coupe when the clock strikes midnight? Why, the Fizz Velvet ($18).

This is the 26th bar that beverage manager Ken Hall has opened in Vegas, so he’s definitely a seasoned pro. Hall kept the yin and yang of sweet and tart in mind when designing the Velvet’s flavors of vanilla, rhubarb and bitter orange, but even more sensational is the way each sip hits the back of your tongue with a seductive texture. Almost like licking velvet.

Ingredients:

¾ oz. Aperol

¾ oz. Art in the Age Rhubarb Tea Liqueur

½ oz. John D. Taylor’s Velvet Falernum

¾ oz. lime juice

½ oz. egg whites

2 dashes of Fee Brothers Rhubarb Bitters

Brut Champagne

lime wheel (garnish)

Method: Add all ingredients except Champagne in a shaker with ice. Shake vigorously and strain into a chilled coupe glass. Top with Champagne and add garnish.
