Sage’s Pink Cashmere is a cotton-candy fix with a tart kick

It’s fall, but that doesn’t mean Las Vegas is ready to give up the pleasures of summer. Aria Property Mixologist Craig Schoettler concocted this twist on a Cosmopolitan for Sage so we can keep indulging in our favorite gossamer dessert.

With a sugary flourish to complete the cocktail, the Pink Cashmere ($18) balances dark-berry sweetness with tart cranberry and lime for a light, lip-smacking sip.

Ingredients:

2 oz. Grey Goose Cherry Noir

¾ oz. fresh lime juice

1 oz. white cranberry juice

½ oz. simple syrup

cotton candy (to taste)

Method: Place a “puff” of cotton candy in a Nick & Nora glass. Shake all liquid ingredients over ice. Pour the cocktail over the cotton candy until it dissolves (adding to taste).
