Scarpetta remains one of our favorites for pasta

Fall, at last, is here. In Las Vegas, cooler temperature means we can eat again—real food, hearty food, the food we’ve been craving and delaying during sunny swimsuit season. Pasta.

The Strip is loaded with fantastic places to eat pasta, and Scott Conant’s Scarpetta perpetually hovers near the top of the list. The sexy Cosmopolitan restaurant is one of those dining destinations that starts out as dinner before the club or show, then grabs the spotlight all for itself, partially because once you’ve moved past salad and soup and perhaps a bite of raw yellowtail with pickled red onion and olive oil, it’s pasta time, and your evening will want for nothing more.

Conant’s legendary spaghetti, rich with butter, tomato and basil, is always a must-order. But it’s the season to indulge again, so consider branching out: tender pici layered with lobster, tarragon, and stunning almond-chili pesto; decadent short rib agnolotti in a brown-butter sauce with toasted breadcrumbs; squid ink tagliolini with sweet dungeness crab meat and creamy uni.

Scarpetta is an ideal date-night destination, but with all these primo plates to choose from, you might need to bring a group—you wouldn’t want to skip a single bite. Scarpetta at the Cosmopolitan, 702-698-7960; daily 6-11 p.m.
