Bite Now: Bison burger at Crave

Though others have since arrived and many more are coming soon, Crave was the first full-service restaurant to open at Downtown Summerlin last month, and it’s been subject to an unsurprising crush of patrons ever since. Hungry shoppers have encountered an impressively diverse menu incorporating Asian, Latin and Mediterranean flavors mixed through flatbreads, soups, sushi, pastas and more.

Several dishes caught us off-guard, including flash-fried and spiced jumbo shrimp with tzatziki ($16.95) and spicy lamb meatballs over black pepper fettuccine ($23.95). But the truly craveable bite was the juicy, pork belly-topped bison burger ($15.95), a study in contrasts. The lean patty is well-seasoned and expertly grilled, the pork brings the decadence, pickled shallots pop and creamy harissa-cilantro mayo blends everything together. If Crave can create a burger this great, the rest of the menu must be worth exploring.
