Finding great cowboy food in Las Vegas

PBR World Finals Week has taken over Las Vegas once again, and this year it’s bigger and better than ever, moving into T-Mobile Arena on the Strip. Bull riders and bull-riding fans are going to be everywhere this week, and they’re going to be hungry. We isolated some ideal candidates to satisfy hearty appetites, including some more than ready to keep the PBR party rolling.

PBR ROCK BAR & GRILL Since it’s officially affiliated with PBR, this is a no-brainer venue any time a rodeo event comes to town. Afterparties and live music amp up this week’s events, and World Finals Week attendees can flash their tickets for a 10 percent discount. But what to eat? Don’t skip the barbecue. Tender and slow-smoked, this is some of the best meat on the Strip, particularly the pork—get a rack of ribs smothered in sauce ($25.95) to share with the table or a piled-high pulled piggy sandwich ($15.99). PRIMARILY PRIME RIB South Point’s equestrian center is home this year to the BlueDEF Tour Finals, culminating on October 31—the same night as a Neal McCoy concert—and the resort’s cowboy vibes carry on to this mezzanine-level restaurant, an upscale but unpretentious eatery with a focus on, yes, prime rib. Check out the barbecue mac and cheese casserole ($7.95) layered with barbecued prime rib and baked to a golden brown. The Cowboy Cut ($29.95) is for serious appetites only, a 26-ounce, bone-in, extra-thick double-cut served with salad and baked or mashed potatoes. South Point, 702-797-8075.

DOUBLE BARREL ROADHOUSE The fact that a bar and restaurant called Double Barrel Roadhouse is just a few steps away from T-Mobile Arena is not an accident. Cold beer, hand-crafted cocktails, live music and Southern-inspired fare like brisket sliders ($9), fried chicken ($14) and “pig candy” bacon ($6) await. Monte Carlo, 702-222-7735.

GILLEY’S If you’re inspired to do some (mechanical) bull-riding of your own, the iconically cheesy Gilley’s is the place. You can catch a line-dancing lesson, too, but don’t sleep on the tasty grub lacing this barbecue-based menu. The New Mexico-style green chili ($7.95) is one of our favorites and will light up your tastebuds. Treasure Island, 702-894-7111.

BOB TAYLOR’S RANCH HOUSE Sneak far away from the Strip out to the great northwest to experience a true Vegas classic, a restaurant under the western influence if there ever was one. Bob Taylor’s has been serving up mesquite-grilled steaks since 1955. A true cowboy should have no problem taking down the Diamond Jim Brady ($49.99), a 32-ounce New York strip.
