When Mott 32 opened at the Palazzo on December 28 last year, it joined a stellar lineup of fine-dining Asian restaurants on the Strip, including Red Plate at the Cosmopolitan and Wing Lei at the Wynn. Mott 32 immediately stood out for having one of the most beautiful interiors in the city. The Joyce Wang-designed space features a wrought-iron fence in the lounge and wallpaper from Sanderson, the U.K.'s oldest wallpaper designer.

Mott 32's sensibility is a fusion of the cities it represents—Chinatown in New York City (the name comes from the famed convenience store at 32 Mott Street), Hong Kong and various regions in China. This global approach guides the menu, says executive chef Alan Ji, adding that the restaurant's clientele are as varied as their tastes. "Right now, a lot of people are coming from different parts of China. We have different regions like Sichuan, Shanghai, Beijing. So we'll make a mix [of flavors] and make everybody happy."

The chef says the menu is constantly evolving, but Mott 32's overarching emphasis on high-quality ingredients prepared in a rustic way remains its core. Just in time for its first-year anniversary, the restaurant debuts a new Sunday dim sum brunch in early January. Specialties include traditional soup dumplings and Iberico pork buns, and, unlike a traditional dim sum joint, where diners order from rolling carts, Mott 32 handcrafts each item to order for maximum freshness, Ji says.
