Excitement is building for the summer opening of Resorts World with the unveiling of its dining and cocktail portfolio, a combination of fine dining and quick-service venues, many of which are making their debut in the Las Vegas market.

“Our guests will have no shortage of incredible dining options when they visit the resort,” said Resorts World Las Vegas Vice President of Food and Beverage Bart Mahoney. “From fine dining to more casual venues, we set out to carefully design a culinary program that will offer a diverse roster of food and beverage concepts.”

Joining previously announced concepts, signature restaurants include ¡VIVA!, chef Ray Garcia’s modern take on regional Mexican cuisine. Garcia, hailed “Chef of the Year” by Esquire magazine, will bring the vibrant food and culture of our neighbors to the south in a lush and contemporary space.

Heading east, Malaysia’s Genting Group brings old-world glamour with Genting Palace, a Cantonese cuisine, seafood and dim sum spot. Kusa Nori, a Japanese concept created by Resorts World Las Vegas, will feature a high-energy sushi bar, yakitori and teppanyaki dishes, and an extensive selection of sake.

Locals favorite and James Beard Award semifinalist Nicole Brisson and industry veteran Jason Rocheleau have two concepts in the works: Brezza brings modern coastal Italian fare, featuring handmade pastas, premier seafood and heritage breeds. Amari takes center stage in the beverage program. Meanwhile, Bar Zazu, a chic cafe concept, will showcase European regional diversity with cold tapas, cheese and charcuterie, and savory pastries. Wines from different regions in Europe will be available by the glass, bottle or flight.

On the more casual end of the spectrum, choices abound, including vegan sweets at LA hot spot Craig’s Vegan; an egg-centric eatery called Sun’s Out Buns out; San Diego staple Tacos El Cabrón; Marigold, an American eatery developed by local entrepreneur Billy Richardson; Richie Palmer’s Mulberry Street Pizzeria, a Beverly Hills institution since 1991; The Kitchen at Resorts World, featuring internationally inspired breakfast, lunch, dinner and late-night fare; and The Market Eats & Drinks, a grab-and-go spot that offers fine wine and and small-batch sodas 24/7. For guests who enjoy whiling away the days poolside, there are four food and beverage options at the resort’s 5.5-acre pool complex, including Agave Bar & Grill, specializing in Mediterranean fare, and Bites, a family-friendly snack bar.

With the resort’s opening, the city will have even more outstanding venues in which to enjoy drinks with much-missed friends, including Starlight on 66, situated 66 floors up and showcasing a collection fine and rare spirits and handcrafted cocktails, and Crystal Bar, a place to be seen in the heart of the casino floor. There are also various casino and lobby bars throughout, as well as Dawg House Saloon & Sportsbook, a Nashville import that will feature live music and dancing, as well as draft beers, cocktails and pub fare with a Southern twist.
