Vegans, Baby is bringing back Vegan Dining Month for the fifth year in Las Vegas starting on January 1, sponsored by Pleese Cheese. The month-long celebration is a partnership between restaurants that offer special vegan menus to give diners the opportunity to get to know local chefs and restaurants, and for restaurants to learn more about plant-based demand. More than 30 Las Vegas restaurants are participating including Barry’s Downtown Prime, Main St. Provisions, Tiabi Coffee & Waffle, Graze Kitchen, Yukon Pizza, Tommy Rocker’s, Valencian Gold and more. For a full list of restaurants and menus, visit vegasbaby.com.

Chica at Venetian reopened on December 26 after an extensive renovation and creation of a new menu. A grand opening event is set for December 31 sponsored by Casa Del Sol tequila, but the Latin-inspired restaurant from John Kunkel’s 50 Eggs Hospitality Group and celebrity chef Lorena Garcia is open for breakfast, lunch and dinner Monday through Friday from 8:30 a.m. until 10:30 p.m., and brunch, lounge and dinner Saturday and Sunday during those same hours. The new design was influenced by the “vibrancy and flavor of Miami,” Kunkel said in a statement, with an updated main bar, a new palette of tropical colors and a mural by graffiti artist Daniel Osorno. Among Garcia’s new dishes are crispy Peruvian octopus with blistered padron chile, Wagyu quesa-birria empanadas, baby back ribs al pastor, pan-roasted ora king salmon and roasted meat parrillada with beef, lamb, venison chorizo and chicken.

“Top Chef” alums and brothers Bryan and Michael Voltaggio are sharing their new collaborative menu concept during a pop-up at Harvest at Bellagio on January 14-16 from 5 until 10 p.m. Voltaggio at Bellagio will feature an a la carte menu of ideas from both chefs that celebrate Italian cuisine, with dishes include smoked tuna carpaccio, macaroni salad with sea urchin cream and blue crab, ink orecchiette with calamari Bolognese and fried squid, truffle risotto and a waffle cone cannoli. Reservations are required and can be made at bellagio.mgmresorts.com.

Superfrico’s hidden Ski Lodge bar is now open seven days a week, from 7 p.m. until 2 a.m., through January 25. Guests can enjoy cocktails developed by Leo Robitschek and the restaurant’s square pizzas, all of which are just $10 on Mondays and Tuesdays.

Delilah at Wynn, one of the year’s biggest restaurant openings, is now open for dinner seven days a week, from 5:30 until 10:30 p.m.

StarBase, the new entertainment and event space from experiential event company FreshWata, has partnered with The Edible Bunch to launch Plant-Based Sundays, a monthly brunch series focused on health and wellness. The first event is set for January 16 from 10 a.m. until 2 p.m., with the series continuing on February 20, March 20 and April 24. Guests will be able to explore the new space and visit food stations offering dishes such as crudite selections with vegan meats, caramelized sugar-crusted French toast, chickpea steaks with fresh herbs, fried cauliflower nuggets, butternut squash mac and cheese, a variety of desserts and more. Live entertainment will be offered as well, hosted by Asia Jade and Dizzy Wright. Tickets are available at starbaselv.com.
