“When I first made the commitment to come to Las Vegas, people told me, 'No one there pays attention to what they eat' and, 'They will not appreciate your food.' But it has been just the opposite! There is a very real clientele here, both tourists and locals, who have made us feel welcome and understand what we are doing in the kitchen. To be a good restaurant, you need to have an ongoing discussion with your customers, and we have found that many people who come to our restaurant here are eager to explore what we do and enjoy it.
