The perfect match: At Tivoli Village’s Kabuki, a cocktail to pair with sushi

The people behind sushi for all mankind are now the people behind cocktails for all mankind. Kabuki Japanese Restaurant, named after traditional Japanese theater performed during the 17th century for commoners rather than royalty, offers Ginza Calpico Soda ($7.50), an affordable Asian aperitif.

Mixing drinks doesn’t get much easier than this. Combine shochu and Calpico, top off with club soda, garnish with a lime and call it a day. Simple but oh so tasty, this no-fuss drink is all about awakening the taste buds.

“Generally, I don’t design strong-flavored cocktails for our restaurants, because I don’t want to ruin your palate,” says Kabuki’s master sake sommelier Yuji Matsumoto. “Ginza Calpico is light, clean and doesn’t have an aftertaste, so it’s great to enjoy before delicate flavors of sushi.”

Ginza Calpico Soda

Ingredients:

2 oz. Ginza no Suzume Shochu

1.5 oz. Calpico Concentrate

club soda

lime wedge (garnish)

Method: Pour all ingredients into rocks glass with ice and stir. Top off with club soda. Garnish with lime wedge.
