RM’s Liberty & Justice is liquid patriotism

Nothing says red-blooded American quite like the moment when Jim Beam meets wet, juicy watermelon. This Fourth of July, “ignite the light and let it shine” with Liberty & Justice ($14), an original libation by lead bartender J.R. Starkus available by request at RM Seafood.

Jim Beam has been making Kentucky bourbon whiskey for seven generations, spanning over 200 years, which dates back pretty close to the day America officially became America. Liberty & Justice celebrates that grand date with the subtle oak and stone fruit of Jim Beam Red Stag Black Cherry, thirst-quenching melon, a touch of tart lemon and sweet raspberry.

Crank up your grill this Wednesday and shake up a batch for America’s birthday, or mosey down to Mandalay Bay to see Starkus mix a cocktail that would make Uncle Sam proud.

Liberty & Justice

Ingredients:

1 ½ oz. Jim Beam Red Stag

1 oz. fresh watermelon puree (see below)

3 dashes Angostura bitters

½ oz. fresh lemon juice

½ oz. raspberry syrup

1 fresh Bing cherry (garnish)

Method:

Add ingredients to shaker with ice. Shake vigorously and pour over ice in a rocks glass. Garnish with fresh Bing cherry. To make watermelon puree, puree watermelon in a blender and double strain through a metal sieve.
