Behold, the Las Vegas Weekly Burger!

When Kerry Simon accepted the challenge of creating the signature Las Vegas Weekly Burger for our Beef Issue, he knew the flavors had to be just like the Weekly—“kinda spicy, a lot of fun and something that just has a different edge to it,” explained the chef. Experimenting in his kitchen at Harrah’s KGB Burger, he came up with the idea to stuff an organic, all-natural beef patty with roasted jalapeños and pepper jack cheese, stacking the creation on a jalapeño-cheddar bun with crispy fried onions and chipotle aoli. “I love jalapeños and they work really well with burgers,” Simon says. “I think we went over the top with it. It’s a lot to handle, but you know what you’re getting into.” Just like us!

To make sure it was up to snuff, we sent intrepid eater Jim Begley to give it a try. His report: “With an overall robust flavor profile, the Las Vegas Weekly Burger is complex, like its eponymous publication. The chipotle adds a nice smokiness and the fried onions textural balance, while the jalapeños on both the bun and inside the burger do not overwhelm with their heat. Simon has done us proud.”
