The Pub at Monte Carlo rotates guest brews for fun, delicious dinner series

The Pub at Monte Carlo held a beer pairing dinner last week, and I really had no say in the matter; we were going.

The spotlighted suds were from New Belgium Brewing Company of Fort Collins, Colorado, a short drive from my wife’s hometown. And we were not the only attendees at the event who had previously toured New Belgium’s brewery and come away as fans, now happy to be sampling new flavors in Las Vegas matched with delicious fare from the Pub’s kitchen.

New Belgium’s night was the third event in the continuing Gus’ Beer and Bites series, which is good news; at a reasonable $64 per person, you should consider one of the upcoming beer dinners. Future brew guests include Sam Adams, Goose Island and Lagunitas. Our event began with appetizers of crab-stuffed mushrooms and bresaola-wrapped asparagus with plenty of Fat Tire, then exploded into five courses with five beers that left everyone happy and satisfied. My favorite pairing was an exquisitely rich pan-seared squab with foie gras expertly matched with New Belgium’s most-awarded brew, the Abbey Belgian-style Dubbel. It’s never available on draft, but that’s the way we had it, compliments of this unique and rewarding event.
