Delicious simplicity from Allegro’s kitchen

Sometimes the easiest recipes yield the most delicious results. Or maybe it’s just ultimately rewarding to throw together something awesome in mere minutes. However you choose to rationalize it, bruschetta is a lovely snack any time and requires little to no effort or skill. And chef Enzo Febbraro, chief kitchen officer at Wynn’s casual Italian restaurant Allegro, loves it. His secret is simple: Use the best ingredients you can find and let them shine. Creamy, delicate burrata cheese and bold, ripe beefsteak tomatoes are perfect dancing partners, kissed with a little olive oil and set upon crusty grilled bread for textural contrast. In the time it took you to read these paragraphs, you could have made this bruschetta. Get to it.

Burrata and Tomato Bruschetta

(serves 4)

Ingredients:

4 slices rustic Italian bread

8 slices beefsteak tomato

8 oz. burrata cheese

1 clove garlic

2 tsp. extra virgin olive oil

6 leaves basil, chopped

salt and pepper to taste

Method: Grill the bread for a few seconds until toasty and grill-marked. Rub the garlic clove on one side of each slice. Place two pieces of tomato and two ounces burrata on each slice of bread and season with salt, pepper, oil and basil.
