With much fanfare, Conrad Gallagher’s PoshBurger Bistro recently opened in a space incongruously hidden away on Charleston and Hualapai. While Summerlin is the Normandy of the recent celebrity chef invasion, Michelin-starred chefs such as Gallagher are a rarity, and it’s common to find the locally based chef toiling away in his kitchen—another rarity.

In a nutshell, PoshBurger presents a menu focused on high-quality burgers. Its menu options are reminiscent of Noah’s Ark, as the more common Black Angus is accompanied by lamb, wild boar and venison. While the menu indicates specials will include elk, ostrich and duck, these critters have been conspicuously absent during my visits.

My first trip, early in the restaurant’s tenure, was marred by uneven service and—particularly in consideration of the hefty price tag—pedestrian burgers. Multiple visits since have been substantially better. Service is smoother, and they simply serve a good burger; Gallagher makes the most of his ingredients, and his Black Angus is outstanding. My suggestion: Order minimally garnished burgers, allowing the protein to headline rather than hide amid the multitude of ingredients on the more expensive specialty options. You’ll thank me for it.

We recently compiled our 2013 list of must-eat burgers. Will PoshBurger make 2014’s list? It certainly could, as burgers with ingredients befitting a chef of Gallagher’s caliber are a rarity that should be embraced.
