James Beard Award-winning pastry chef Dominique Ansel, perhaps best known as the originator of the croissant-doughnut hybrid treat the Cronut, is set to open a bakery at Caesars Palace in the summer of 2022. Caesars Entertainment Regional President Sean McBurney said the company has been courting Ansel for years and is “delighted that the time is right to create something true to Dominique’s incredible vision.”

The shop will be located in a soon-to-be-constructed space next to Gordon Ramsay Pub & Grill and will feature many of Ansel’s signature items including the Cronut, the “DKA” Kouign Amann, the Cookie Shot and Frozen S’mores. Named the World’s Best Pastry Chef in 2017 by the World’s 50 Best Restaurant Awards, Ansel opened his first bakery in New York City’s Soho neighborhood in 2011 after serving as pastry chef at Daniel when the restaurant earned its third Michelin star. He’s also the author of two cookbooks.

“We’re quite conservative in where we choose to grow and open our shops, and at the end of the day, it’s all about the team you build,” Ansel said in a statement. “There’s so much talent in Las Vegas and we’re excited to be amongst some of the best."
