Cheat on your cocktail with Cherry’s Summerlin Affair

Just when you thought you didn’t have enough summer romance, Cherry nightclub at Red Rock presents the Summerlin Affair ($13). This summertime tryst-in-a-glass is a twist on the mojito. Instead of rum, Grey Goose Cherry Noir meets a medley of sweet maraschino cherries, fresh mint, rock candy syrup and lime juice. The result is an up-front hit of lip-puckering sweetness, followed by a herbaceous sprint to the finish. As Nightlife GM Mark Gilbert explains, “Friday is a great night to come to Cherry. The party is called Curious Fridays, and it’s kinda like you walk in the door and you’re not really sure what’s going to happen.”

Summerlin Affair

Ingredients:

1 ½ oz. Grey Goose Cherry Noir

2 oz. club soda

½ oz. rock candy syrup

½ oz. fresh lime juice

¼ oz. cherry juice

splash of Sprite

7 maraschino cherries (stems off)

15 mint leaves

Method:

Fill shaker with ice. Add fresh mint leaves, fresh squeezed lime juice, rock candy syrup and Grey Goose Cherry Noir. Shake all ingredients until shaker becomes frosty. Add 6 cherries and ¼ oz. of cherry juice, shake three more times and pour into tall glass. Top with club soda and splash of Sprite and garnish with remaining cherry.
