In the U.S., the release of a new artisan cheese is worth a small fuss. For the English, however, it is a rare event of great importance. Recently, the well-respected Neal’s Yard Dairy in London began distributing a new blue cheese called Stichelton. This cheese is made by hand in limited quantities (only 108 cheeses per week) from unpasteurized organic cow’s milk. It’s a blue cheese in the traditional English style—creamy white with delicate blue-green veins; it has an appley flavor with nutty, toasty notes that expand, develop and linger in the mouth. Right now, it can only be found at Valley Cheese & Wine in Henderson. It’s worth the drive.
