Center Cut's menu features a 20 oz. rib-eye and a 24 oz. porterhouse, with 100 percent hormone- and steroid-free beef from Aspen Ridge Farms in Colorado. The menu also features seafood, rack of lamb and the Kobe burger. Dinner is available from 5:30 p.m. to 10:30 p.m. daily.
A large bar and lounge area, which is open from noon to midnight daily, offers specialty martinis, other cocktails and wines by the glass. Happy hour, which runs daily from 11 a.m. to 7 p.m., includes 2-for-1 martinis.
The Las Vegas Weekly's Brock Radke says Center Cut doesn't have a celebrity chef at the helm. But it does stand out with its appetizers: "The appetizers impress at Center Cut, especially the impossible-to-ignore trio bacon satay ($16): three thick swine strips augmented with cayenne pepper, applewood smoke and blue cheese, all riding a block of pink rock salt."
