Weekends are always a good time for barbecue, and on Saturday, October 3, chef Bruce Kalman will pop in at DW Bistro as part of its Guest Chef Series. The southwest eatery's monthly event is "a chance for a chef to use our kitchen as a blank canvas," says DW Bistro owner Bryce Krausman. Kalman, who appeared in Season 15 of Top Chef, will bring his nationally acclaimed Soul Belly BBQ for an indoor/outdoor smoke-out.
The family-style menu will start with a welcome cocktail, followed by appetizers like barbecue meatballs and grilled cheese with hot sweet pepper relish. The meats coming out of the smoker will include salt and pepper beef short ribs, Carolina pulled pork and chipotle cider-glazed chicken drumsticks. And of course, it’s not a barbecue without the sides—cole slaw, Gigi’s Green Chile & Cheddar Corn Casserole and Texas Ranch baked beans round out the menu, with a bourbon banana pudding with Nilla Wafers and fresh whipped cream for dessert.
