It’s tough to get a good vegetarian sandwich in this town, especially one that doesn’t just replace the meat of an already established sandwich with a veggie substitute. That’s why I love the vegetarian offerings at the Goodwich. These are well thought-out, well-constructed creations that prove meatless sandwiches can be just as tasty as their traditional counterparts.

The roasted cauliflower ($5) takes a bunch of good things and puts them together to make something even better. Currying cauliflower is always a good idea. Onion fondue adds to the flavor profile and Asian-style crispy rice is a textural delight.

The pulled squash ($7) is another delicious option. The squash is spaghetti thin, covered in mushrooms and collard greens. Pepitas (toasted pumpkin seeds) bring a necessary crunch, and the bread—opt for marble rye—is slathered with creamy gruyere cheese, providing a pleasurable medley of tastes.

The Goodwich changes the menu seasonally, but these are two sandwich choices that could have you forgetting about meat year-round.

The Goodwich 1516 Las Vegas Blvd. South, 702-910-8681. Tuesday-Saturday, 11 a.m.-10 p.m.; Sunday, 11 a.m.-4 p.m.
