Las Vegas locals’ favorite Red Rock Casino bringing in new restaurants, bars and amenities

Station Casinos has announced a raft of additions and revisions to its wildly popular west side property, Red Rock Casino. They include restaurants operated in partnership with Penny Chutima and Lou Abin's Bua Food Group, including an oyster bar, Kallisto; a new Greek restaurant called Naxos Taverna; and the third Valley location of a celebrated Vegas institution, Thai eatery Lotus of Siam.

A new casino bar, high-limit slots room and adults-only pool area fill out the substantial transformation of the Summerlin casino, resort and spa.

“It is an exciting time for Red Rock Casino as we welcome the Lotus of Siam family to Summerlin and showcase the many dining, gaming and entertainment enhancements coming to the resort," Scott Nelson, Red Rock's Vice President and General Manager, said in an email statement. "This stunning transformation will usher in the next era for the property, and we are confident these new amenities are going to be a hit with locals and visitors alike."

The restaurants will join Red Rock's restaurant row on the north side of the property. Naxos Taverna will feature traditional and authentic Greek seafood-focused cuisine, while the intimate, 13-seat Kallisto Oyster Bar will offering fresh seafood options at Naxos' entrance.

Next door, the newest location of Lotus of Siam, due in late 2022, promises to serve up the restaurant's storied Northern Thai cuisine and warm hospitality in a stylish, high-energy atmosphere.

Plus, a Henderson neighborhood fave, Nielsen's Frozen Custard, is also joining Red Rock's dining mix, as is a second on-site Starbucks, located adjacent to the lobby.

Red Rock's 21-and-over offerings are also getting a glow-up. A new high limit slot area will boast 73 games, a high-end cocktail bar and its own cage.

The former Crimson pool will become a sophisticated adults-only oasis, independent of the main pool area. And three new bars are in the offing: an all-new casino bar located between Lotus and Naxos, a lounge for the adult pool area and an old-school cocktail lounge in the former Crimson event space.

More Red Rock additions are planned; announcements will be made soon. In the meantime, the very idea of a Summerlin Lotus is enough to get us facing west in anticipation.
