Firehouse Subs, 9555 S. Eastern Ave., 893-3473. A love song for steamed meat: It’s hot, soft and fresh. Chewy, firm and oozing with flavor. “Welcome to Firehouse!” the new staff of the new sub shop shouts when you walk in. Odd little touch for what seems like a standard chain sub shop. Maybe they’re going for the anything-but-standard vibe, even though, indeed, this sandwich haven near Eastern and Serene is the first Vegas manifestation of a Florida chain. No matter. Because once you sink your teeth into an Engine Company Sub—soft bun, steamed beef, melted cheese, light lettuce; and once you find the treasure of crushed ice (!) in the soda machine, making your soda slushy and fizzy all at once, you’ll be thinking you’ve found a mom ’n’ pop gem. Welcome to Vegas, Firehouse!
