Chewy, firm and oozing with flavor. “Welcome to Firehouse!” the new staff of the new sub shop shouts when you walk in. Odd little touch for what seems like a standard chain sub shop. Maybe they’re going for the anything-but-standard vibe, even though, indeed, this sandwich haven near Eastern and Serene is the first Vegas manifestation of a Florida chain. No matter. Because once you sink your teeth into an Engine Company Sub—soft bun, steamed beef, melted cheese, light lettuce; and once you find the treasure of crushed ice (!) in the soda machine, making your soda slushy and fizzy all at once, you’ll be thinking you’ve found a mom ’n’ pop gem.
