The Big Easy

INGREDIENTS:

1.5 oz. Absolut New Orleans

0.25 oz. Cruzan Guava

2 dashes Peach Bitters

1.5 oz. Organic Italian Blood

Orange Soda

1.5 oz. fresh lemon sour

0.25 oz. pasteurized egg white stirred

Garnish with black pepper, a carved kumquat “head” made with icing and a “cigar” of a dehydrated rosemary stem. Light just before service.

With the devastation of Hurricane Katrina still unfolding,, Absolut created, in tribute, Absolut New Orleans, flavored with mango and black pepper; proceeds benefit those affected by the disaster. In his own tribute, Alba added even more juicy fruit flavors and amped up the spice with freshly ground black pepper. Of course, the drink could easily be served without the playful, cigar-smoking garnish … but why?
