Bandera at China Poblano
Bandera is Spanish for “flag,” so mirror Mexico’s verde, blanco y rojo by giving the Bandera treatment to any of China Poblano’s white tequilas. Chase sips of tequila (the blanco) with sips of lime juice (the verde) or a house-made sangrita (the rojo, a blend of orange and pomegranate juices with chile piquín) to elevate the liquor’s flavor and cleanse the palate. Prices vary. —Mark Adams
