Bandera at China Poblano

Bandera is Spanish for “flag,” so mirror Mexico’s verde, blanco y rojo by giving the Bandera treatment to any of China Poblano’s white tequilas. Chase sips of tequila (the blanco) with sips of lime juice (the verde) or a house-made sangrita (the rojo, a blend of orange and pomegranate juices with chile piquín) to elevate the liquor’s flavor and cleanse the palate. Prices vary.Mark Adams

Aztec Warrior at Spago

Fight off party fatigue with an ancestral Wolfgang Puck elixir of Fidencio Mezcal, chili-infused agave nectar, lime and pineapple juices, egg whites and chili powder. Polish one off and you’ll be prepared for any dancefloor battle. $14.Leslie Ventura

Tamarind Margarita at Frank & Fina’s Cocina

This newly launched libation will take you back with a boozy spin on the popular Mexican candy. Made with hand-pressed tamarind pulp, raw sugar and a tequila of your choice, this ’rita is sticking around after M.I.D., so you have an excuse to celebrate any time of the year. $7LV

Pineapple Chipotle Margarita at Rhumbar

You’ve probably had chipotles in a Mexican dish or two, but the smoked jalapeño also beautifully lends itself to libations. Sweet meets spice in this marg, which blends lime and pineapple juices with Monin Chipotle Pineapple Syrup and a dash of Tabasco Chipotle Pepper Sauce. $12.MA
