The idea behind the City of Las Vegas’ Project Enchilada initiative is to revitalize Vegas’ Downtown in its entirety—the “whole enchilada,” as the saying goes. We’re not there yet, but the literal first signs of that effort—restored neon pillar signs from Fremont’s defunct midcentury motels—are appearing in the median of Las Vegas Boulevard, and they look delicious.
