Whether it’s an intimate night at your favorite restaurant or a decadent, luxurious meal to kick off 2015, we’ve curated a list of Las Vegas dining options this New Year’s Eve. Now just eat, drink and enjoy the fireworks.

Looking to stay off the Strip this New Year’s Eve? Head to Triple George for a four-course dinner with options like seared foie gras, lobster bisque and a nine-ounce filet mignon and a lobster tail stuffed with truffle mashed potato, sautéed mushrooms, red wine demi-glace, Dungeness crab and lemon butter sauce. $60, 4-10 p.m., 702-384-2761.

Celebrity Chef Kerry Simon pulls out the stops with his Downtown destination, Carson Kitchen. Prepared by executive chef Matt Andrews, the prix-fixe, five-course menu includes “devil’s eggs” and “killer” shrimp, persimmon and pear salad, seasonal steelhead trout with house-made country bacon relish and a choice of cocoa-espresso New York strip steak or pork belly carbonara. $99, 5-10 p.m., 702-473-9523.

Border Grill at Mandalay Bay hosts a “Golden New Year’s in New York” reception with a curated menu and unlimited offerings including ceviche station and paella stations, spicy mushroom and grilled relleno tacos, octopus asada and passed appetizers, plus an open bar serving margaritas, sangria, beer and Champagne. $75 advance tickets, $85 at the door, 7-9:30 p.m., 702-632-7403.

Carnevino at Palazzo offers four New Year’s Eve menus including the Chef’s Tasting Menu ($195 per person) with Dungeness crab and caviar, dry-aged beef tortellini, dry-aged bistecca di fiorentina and chocolate cake. The Menu Tradizionale ($165 per person) includes grilled octopus, lobster anolini, dry-aged ribeye steak and a peanut butter torta. The Prix Fixe Menu ($135 per person) includes options like calamari fritti and an 8-ounce filet mignon while the Prefisso Menu ($75 per person, available until 5:30 p.m.) includes antipasti, an eight-ounce filet mignon and gelato. 702-789-4141.

Seafood Shack at Treasure Island offers a three-course menu with lobster bisque, filet mignon, butter-poached shrimp and a chocolate and chestnut decadence for dessert. $54.95, 5-10 p.m., 702-894-7349.

Crush at MGM will offer the choice between a four-course menu ($95, served from 5 to 7:30 p.m.) or a five-course dinner ($125, served from 7:30 to 11 p.m.), both including selections like tuna crudo salad, lobster pot pie, a wagyu beef filet and dessert. An additional wine pairing is optional for $45, or diners can opt for the sommelier selection pairing for $85. 702-891-3222.

La Cave at Wynn’s prix-fixe menu features crispy pork belly cobb salad, duck coq au vin, European black bass, wagyu beef short rib and dessert. $95 for four courses and $125 for five courses, 702-770-7375.

Executive Chef Peter Scaturro of Forum Shops Italian eatery Trevi offers a five-course dinner with selections like crab and corn bisque, steamed mussels, lobster ravioli and grilled swordfish or grilled lamb chops. $95, 11 a.m. to 9 p.m., 702-770-7375.

Chef Joseph Elevado of Andrea’s at Encore offers a prix fixe menu featuring kabocha soup with white truffle, poached Kumamoto oysters, Japanese tai snapper with Brussels sprouts, Japanese A5 strip loin and the restaurant’s celebratory dessert. $275, 9, 9:30 or 10 p.m., 702-770-5340.

Created by executive chef Jon Amorin, Crystals eatery Social House’s premier tasting menu includes omi taro (Japanese wagyu, crème fraiche and sparkling sake), Kumamoto oysters, smoked octopus, sea urchin panna cotta, Mediterranean sea bass, pork tenderloin, 48-hour marinated short ribs, and the chef’s selection of nigiri. $125, 702-736-1122.

Enjoy a three-course Mexican-inspired meal at Cantina Laredo inside Tivoli Village. The dinner includes sopa de calabaza, a 7-ounce certified Angus beef filet mignon and sinfully sweet churros drizzled with chocolate raspberry sauce. $35, 702-202-4511.

Anthony’s Gourmet Burgers & Brews at M Resort will offer a special surf and turf, three-course menu with creamy lobster bisque, herb-roasted beef tenderloin and butter-poached lobster tail, ending with a warm chocolate lava cake. $40, 4-10 p.m., 702-797-1000.

Sammy’s Restaurant & Bar in Green Valley will celebrate NYE with a five-course menu including lobster bisque, duck quesadillas, flat-iron steak or oak-roasted salmon and salted caramel pudding. $60, beginning at 8 p.m., 702-567-4000.

North Las Vegas’ MRKT Sea & Land at Aliante will offer a prix-fixe, four-course meal with truffled mushroom soup, a filet with garlic mashed potatoes and asparagus and a molten chocolate cake. $75, 702-692-7777.

Silverado Steak House at South Point will serve a four-course menu including warm, oven-baked figs wrapped in apple-smoked bacon and filled with a goat cheese balsamic glaze, lobster bisque and Long Island duck breast chambord or filet mignon with béarnaise sauce. $69, 5-11 p.m., 702-796-7111.
