Michael Mina’s American Fish to transform into Bardot Brasserie

Chef Michael Mina's seafood restaurant at Aria, American Fish, will close in July to make way for Bardot Brasserie, a new Mina concept set to debut in the winter.

American Fish opened with Aria in late 2009. The change is nothing new for Mina or MGM Resorts, as another seafood restaurant operated by the James Beard award-winning chef, Seablue at MGM Grand, transitioned into Pub 1842.

Bardot Brasserie will "pay homage to the café culture of Paris," serving lunch and dinner featuring traditional brasserie fare. The menu will feature a roving shellfish cart, steak frites, roasted bone marrow with bacon marmalade, and a signature burger with comte cheese, caramelized onions and bordelaise sauce. Chef Joshua Smith will helm the kitchen.
