Old Forester's 13 Festive Fashioneds
Recipe:
• 1.5 oz Old Forester 86
• .5 oz Choya ume plum liqueur
• .75 oz Becherovka
• Pinch kosher salt
Combine all ingredients in an old fashioned glass with a big cube. Stir in glass and garnish with orange peel and whole star anise.

The inspiration for the Old Fashioned we're showcasing is purely a reflection of our cuisine with a nod to familiar holiday flavors. We are an eclectic seafood house that leans heavily on Japanese influence, but we don't consider ourselves any particular style.
The cocktail is constructed simply by pouring all the ingredients over a large ice cube and stirring in the glass. It's garnished with an orange peel and a whole star anise for aromatics.
The flavor profile is obviously anchored by the dependable Old Forester 86. For modifiers, I use a Czech liqueur called Becherovka, as well as a Japanese black sugar ume liqueur by Choya. The Becherovka is there to evoke the spices of the Christmas season with notes of allspice and clove. The ume liqueur brings a soft richness to balance it all out. The drink also incorporates a pinch of sea salt to enhance the umami effect.
