Casual corner: Three takeout options from Henderson’s Shoppes on the Parkway

The stretch of St. Rose Parkway south of Maryland Parkway is suddenly buzzing with activity. St. Rose Square, which houses Costco, is quickly populating with fast-food and fast-casual choices, including Popeyes, Cafe Rio, Starbucks and a much-anticipated new In-N-Out Burger.

But right across the street, the Shoppes on the Parkway are also quickly becoming a quick-serve hub, offering another slew of strong takeout options. We stopped by recently and added a few new favorites to our rotation.

Potbelly Sandwich Shop, a beloved toasted sandwich purveyor from the Windy City, is making big moves in Nevada, opening the first of 10 locations. Sure, it’s a hop, skip and throw away from a Subway, but the more the merrier when it comes to meat on bread (or PB&J, if that’s to your liking). Don’t skip the hand-dipped milkshakes, which are reason enough to eat dessert first. There’s also a robust salad selection if virtue is calling you. 3578 St. Rose Parkway, 702-463-8303.

The Mediterranean Diet annually tops the list of the best ways we should be eating. The second location of the Great Greek Mediterranean Grill will help support those New Year’s resolutions with heart-healthy selections including salads, lean proteins and hummus. Coffee is the specialty at Founders Coffee, but the toasts also keep us coming back, especially the Deluxe Lox Toast, a generous slice of multigrain bread with smoked lox cream cheese, chopped boiled egg, capers, chives and smoked lox.
