The Summerlin area has long been a stronghold for breakfast restaurants, but no matter what pops up, the Omelet House at Lake Mead and Rampart has consistently been one of the most popular morning eateries in the neighborhood. After purchasing it 15 years ago from the owners behind the landmark Omelet House on West Charleston, the Sessa family added their own unique twists to the menu and the restaurant and created something new.

Now, Centennial Hills residents have their own version. The Omelette Cafe opened in the Skye Canyon Marketplace center on January 20, bringing the same massive menu of signature omelettes to the far northwest. And it’s starting to grow as quickly as its surrounding neighborhood, adjusting after a wait-and-see opening during tight pandemic restrictions. Many more booths are being installed for that cozy coffee shop feeling, and a liquor license is on the way.

Your favorite dishes are here, too, like the pork chili verde omelet ($14) with freshly made tomatillo sauce that pops with every bite; chicken-fried steak and eggs with sausage gravy ($14)and the “South of the Border” skillet ($13) with chorizo, green chile, fresh salsa and Jack cheese. This location also has a daily specialty board for those ready to try something new, and exclusive menu items include sweet-and-spicy chicken and waffles, eggs Benedict with lobster and avocado ($15) and a breakfast panini on house-made focaccia.

Anyone who remembers the Italian specialties from the Summerlin spot’s former dinner menu will appreciate that fluffy focaccia, and you can find other familiar favorites with the lasagna omelet ($14) or the No. 27 Italian ($14), filled with meatballs, marinara and mozzarella.

Balance all that savory with the sweet, stuffed French toast ($10) filled with your choice of blueberries, Nutella or cinnamon-apple cream cheese, or go way over the top with bananas foster, red velvet or cannoli pancakes ($10). If you take the cannoli, be prepared for ricotta filling, a sprinkle of sweet cannoli shell crumbles, a chocolate drizzle and plenty of whipped cream.

OMELETTE CAFE 9670 W. Skye Canyon Park Drive #150, 702-396-0605. Daily, 7 a.m.-3 p.m.
