Japanese-Filipino bakery Milk Bread serves up breakfast treats and delicate desserts

Nothing sets you up for the day like a strong coffee and delicious pastry, and Chinatown has a new spot offering just that. Elevate Hospitality Group opened Milk Bread on South Jones Boulevard in December, and it’s already made a splash with homemade breads, pastries and cakes, and delicious, Filipino coffee.

Lead pastry chef Yuka Takamizawa says the signature shokupandesal ($6.50) came from mixing her Japanese pastry background with the culinary tastes of the Filipino members of the company. Milk Bread chef Jesus Castillo perfected the recipe, which is a combination of the classic Japanese shoku milk bread and the Filipino pandesal, a popular breakfast roll. 

The shokupandesal uses milk, yeast, flour, butter, salt and a few other “secret ingredients,” Castillo says, and can take up to three hours to rise. The result is a fluffy and subtly sweet bread worth coming back to each morning. Gobble up warmed slices with yuzu or cinnamon butter, or opt for an upgrade.

Milk Bread’s wildly popular “cubes”($8.50) are hollowed out shokupandesal filled and topped with icing flavors including ube, chocolate, strawberry, blackberry, lemon, pistachio and other seasonal options. 

The pastry case contains many other delectable goodies, the most highly recommended being the cheese rolls ($1.50), which can be consumed in five to six bites as the perfect complement to rich, Filipino-roasted Kapeng Barako coffee ($6.50).

Don’t glaze over the refrigerated case, which contains different flavors of brûlées ($5), creamy tarts topped with fresh fruits ($7 and up), comforting bread pudding ($6), tropical mango mousse ($5.50), Basque cheesecake ($6.50) and various flavors of spongecakes ranging from taro to tres leches to tiramisu ($6.50-$7). 

For special occasions, Milk Bread has an assortment of expertly crafted cakes for every type of palate (starting at $37, pre-order at least 48 hours in advance). The green tea chiffon cake comes layered with a cream that combines chestnuts, white chocolate and red bean. The yuzu rare cheesecake is sandwiched between a graham cracker crust and yuzu jelly.
