Another new restaurant is opening soon at Red Rock Resort. Station Casinos’ flagship property already added Mercadito, the Wiener’s Circle and Hearthstone this year, and opening next month is 8 Noodle Bar, offering an “approachable Asian fusion menu.” Veteran chef Andy Vu will be at the helm of a kitchen dabbling in Chinese, Japanese, Vietnamese and Thai foods.

Now is the time for Italian white truffles, and Ferraro’s is going all out. The beloved local Italian restaurant is pairing five courses of Alba truffle-topped cuisine with Nebbiolo wines (from Piedmont, like the truffles) for a special one-night-only dinner on December 10. The menu will include butter squash gnocchi with hazelnuts, brown butter and sage, and truffle butter seared scallops over fontina cheese polenta with black truffle cream. Tickets are $275, and reservations can be made by calling 702-364-5300.

Spago is taking it back to the old school. To celebrate its 22nd anniversary at the Forum Shops, Wolfgang Puck’s original Vegas restaurant will serve a special throwback menu featuring retro pricing and original dishes December 15-19. What did Spago taste like in 1992? Think smoked sturgeon on potato galette, tempura shrimp with Thai basil aioli and, of course, the legendary smoked salmon pizza with dill cream and caviar.
