Run for the Roses

Little known around town (till now), the Bellagio and MGM Grand are the only casinos to participate in the Woodford Reserve Personal Selection program, that is, every so often they select two single barrels of bourbon that are combined to create the Bellagio’s own signature blend. Darren West’s Run for the Roses (along with its sister, Ray Srp’s Double Down) is the ideal expression of Bellagio’s very good taste in bourbon.

Ingredients:

8-10 fresh mint leaves

8 small chunks of pineapple

0.25 oz. Monin ginger syrup

0.75 oz. Apry apricot liqueur

1.5 oz. Woodford Reserve Bourbon, Bellagio Personal Selection

0.25 oz. fresh pineapple juice

Method: Muddle mint, pineapple and syrup in a tall glass. Add crushed ice to fill. Add Apry and bourbon, stir from the bottom up and garnish with a mint sprig, pineapple wedge and powdered sugar.
