Resorts World will welcome Top Chef winner Jeremy Ford’s Stubborn Seed in summer 2024. The Michelin-starred restaurant from Miami Beach from Ford and Grove Bay Hospitality will offer a tasting menu featuring seasonal and locally inspired ingredients, a full beverage program and more. It will be located in Resort World’s restaurant district just off the Conrad Hotel main porte cochere.

Restaurateur and reality TV star Lisa Vanderpump is set to open her third Las Vegas Strip venue with Caesars Entertainment with Pinky’s by Vanderpump, primed for a summer opening at Flamingo Las Vegas. Spanning nearly 7,000 square feet and designed with Art Deco flair by the Vanderpump Alain company, Pinky’s will take the place of the former Purple Zebra space.

Tao Group Hospitality is planning to open Chez Bippy, a speakeasy inside Luchini, at MGM Grand this month, offering craft cocktails in an intimate space.

Battle Born Hospitality operators Lyle Cervenka and Bryant Jane, the local bar legends behind Starboard Tack and other beloved spots and projects, are set to open Bar Centrál at the Huntridge Theater as part of the historic venue’s renovation project, which Dapper Companies is planning to start up in the first quarter of 2024. According to a recent announcement, Bar Centrál will “bring a modern interpretation of bodegons found throughout Buenos Aires. The concept will combine an Italo-Hispano style delicatessen with a boutique bottle shop and cocktail bar all under one roof.” Its deli will feature sandwiches with Argentine influence and the cocktail program will highlight South American spirits in addition to an extensive collection of wines, craft beers and non-alcoholic options.

Arizona Charlie’s Decatur is set to renovate the Naughty Ladies Saloon into the rebranded Coverall Lounge, a new lounge seating more than 100 guests in a modernized atmosphere with live entertainment every Friday and Saturday night. It will be open from 4 p.m. until midnight Monday and Thursday, 10 a.m. until 2 a.m. Friday and Saturday, and 10 a.m. until midnight Sunday. The property also recently celebrated the grand opening of River Rock Pizza & Pasta.

Urbane Café has opened in Henderson at 1321 W. Sunset Road #130. Serving innovative sandwiches, salads and bowls, it’s open Monday through Saturday from 10:30 a.m. until 9 p.m., and Sunday from 10:30 a.m. until 8 p.m.

3 Little Chicks, from the creators of Café Lola and Saint Honore, has opened at 7885 W. Sunset Road #180, serving classic chicken favorites with a twist as well as gluten-free and vegan options. The menu includes grilled and fried sandwiches and tenders, salads, bowls, sides and more, including the signature beverage, a house-made limeade with ginger. It’s open Sunday through Thursday from 10 a.m. until 9 p.m., and Friday and Saturday from 10 a.m. until 10:30 p.m.

The Suncoast Hotel and Casino is set to open William B’s Steakhouse in the space formerly occupied by Salvatore’s Italian Restaurant on November 8. The nearly 7,000-square-foot restaurant features 13-foot ceilings, a bar and lounge area, a 20-foot-long Murano glass chandelier, and a climate-controlled, 500-bottle stainless steel wine display. Menu options include a pan-roasted seafood tower during happy hour (4-5 p.m.), braised beef short ribs, pacific swordfish, a tomahawk ribeye and much more. William B’s will be open Wednesday through Sunday starting at 5 p.m. with the last seating at 9 p.m., except for Friday and Saturday with a last seating of 10 p.m.

Stripsteak at Mandalay Bay will host a wine dinner celebrating Bordeaux’s Chateau Troplong Mondot on November 10 at 6:30 p.m. The six-course dinner created by Mina Group head of culinary Gerald Chin will be matched by pairings by master sommelier and Mina Group wine director Jeremy Shanker and Chateau Troplong Mondot general manager and winemaker Aymeric de Gironde. Tickets are $395 and reservations are available at SevenRooms.

Downtown Container Park will host its Fall Beer Festival on November 11 from 4 until 7 p.m. Seasonal offerings from Able Baker, Hop Valley, Brewdog, Tenaya Creek and other local and regional brewers will be available, and the ticket price of $30 includes bottomless beers from various bars around the park and the Tap Truck mobile brew wagon. To celebrate 10 years of the Downtown Grand and Pizza Rock, the hotel and casino is hosting the Last Person Kneading contest on November 11 at 9 a.m. at the 3rd Street Promenade. The winning participant of the pizza dough kneading contest—who continuously kneads the longest without stopping— will win 10 nights of stays at Downtown Grand and 10 pizzas from Pizza Rock. The Sand Dollar Lounge is bringing back the popular Miracle on Spring Mountain pop-up at its original location and the Sippin’ Santa on Main version at Sand Dollar Downtown at the Plaza, with both programs running from November 20 through December 31. Expect special holiday cocktails and over-the-top décor at both Sand Dollars.

Durango Casino & Resort has announced its new signature steakhouse, Nicco’s Prime Cuts & Fresh Meats, set to open November 20. Executive chef Frankie Corriceta and property executive chef Daniel Ye have curated a menu including 14-day dry-aged prime rib, dry-aged Mediterranean branzino, beef shank agnolotti, tableside grilled Wagyu flights and more, including classically inspired cocktails and a 500-bottle wine list. Also at Durango, Clique Hospitality has announced its latest cocktail lounge concept, Wax Rabbit, set to open as a hidden venue behind Mijo Modern Mexican Restaurant on November 21. Designed by Alessandro Munge, the 1,000-square-foot lounge will specialize in cutting-edge mixology and classic drinks using Mexico’s finest spirits, focusing on mezcals and tequilas. Wax Rabbit will also feature DJs spinning vinyl every night.

Paymon’s Lounge, which was recognized by the City of Las Vegas as “America’s First Hookah Lounge” on October 31—which was declared Paymon’s Lounge Day—has also unveiled fall-themed dishes, drinks and hookah including: pumpkin rice pudding; the Taffer Bourbon cocktail made with Jon Taffer’s Browned Butter Bourbon, orange, Demerara sugar, orange extract, bitters and soda; and pumpkin spice tobacco.

Villa Azur at Venetian recently launched a Sunday party brunch offering, Brunch Club University, which adds a celebratory atmosphere, DJs, dancers, live musicians and surprise performances to the upscale restaurant starting at 11 a.m. every Sunday through the end of March. Special menu items include Everything Avocado Toast, the Villa Omelet with Ossetra caviar, the Dutch Baby pancake with bananas foster sauce and whipped cream, and a crispy chicken sandwich with citrus slaw.

STK at the Cosmopolitan is now serving weekday lunch, available Monday through Friday from 11 a.m. until 3 p.m. The lunch menu includes the STK Sandwich (chimichurri filet, caramelized onions, gruyere, horseradish cream), a Wagyu burger with fries, the braised short rib quesadilla and more. A three-course power lunch option is priced at $44.

Ocean Prime at 63 on the Las Vegas Strip has launched weekend brunch, available Saturday and Sunday starting at 11 a.m. Among the signature brunch dishes are crabcake eggs Benedict, brioche French toast, prime steak and eggs, the Smoking Shellfish Tower and more.

Delmonico Steakhouse at Venetian recently returned to lunch service, available daily from 11:30 a.m. until 2 p.m. Chef de cuisine Ivan Rojas also unveiled seasonal menu offerings recently, including winter squash agnolottie with sage brown butter sauce, Creekstone Farms beer-braised short ribs, and cornbread-stuffed young chicken.

Julian Serrano Tapas at Aria is now open for lunch, serving it up Monday through Wednesday from 11:30 a.m. until 3 p.m. In addition to a la carte selections, Julian’s Lunch Menu is a pre-fixe offering with an array of appetizers, entrees and dessert with paired wine and sangria for $39.
