Does your knowledge of sake fit in a thimble-sized sake cup? You’re not alone. The daunting—and often impossible to pronounce—list of sakes offered at a sushi restaurant is pretty difficult to navigate unless you at least know the basics. Enter Ra Sushi’s resident sake expert Alex Summer. At a recent sake and sushi pairing (a test run before making it a regular event), Summer paired this unfiltered (nigori) sake with a dazzling assortment of Ra’s most popular rolls, including the Zonie and Viva Las Vegas rolls. Light and slightly sweet, this milky white sake paired perfectly with the spicy dishes. Refrigerate sake at home and serve chilled. It is said it’s bad luck to pour your own sake, so pour for others, letting it overflow into the masu, the little wooden sake box. But don’t drink from the masu. Experts advise pouring the overflow (signifying abundance) back into your glass. “Kampai!”
