Linq’s new Chayo serves up a salute to our warm winter

While cold temperatures have been wreaking Arctic havoc across the country and sending chilly hands searching for a hot toddy—which had its national celebration on the last day of the “polar vortex”—it’s been sunny skies, easy-breezy cocktails and business as usual in Las Vegas. And business as usual means new businesses, including Chayo, the first restaurant to open in the highly anticipated Linq. Chayo Mexican Kitchen & Tequila Bar is a gorgeous two-story complex, with a mechanical bull, a wall of authentic sombreros in the color scheme of the Mexican flag and some seriously delicious tequila cocktails.

The Office ($14) is a libation that traces its roots to Cabo San Lucas. As legend goes, a local character rented windsurfing equipment on the beach to entertain his clients, referring to the spot as “the office.” Chayo’s honorary drink goes down easy with refreshing notes of lemongrass, cucumber and elderflower.

Ingredients:

1 ½ oz. Patrón Silver (lemongrass infusion optional)

½ oz. fresh lemon

¼ oz. agave syrup

¾ oz. St-Germain Elderflower Liqueur

1 fresh cucumber stem

1 lemongrass stalk

half-bottle Mr. Q Cumber Soda

Method: Add first four ingredients to a shaker with ice. Shake and strain into a Collins glass. Top with cucumber soda and garnish with fresh cucumber stem and lemongrass stalk.
