  • 2 dashes Bitter Truth Chocolate Bitters
  • 1 tsp. Cherry Morlacco Luxardo
  • 1 tsp. Pedro Ximenez Sherry Lustau
  • .25 oz. Umeboshi Plum Cordial
  • .75 oz. Carpano Antica Formula Vermouth
  • 5 oz. Old Forester Bourbon

Add ingredients to a mixing glass. Stir and strain. Pour over a big rock of ice. Garnish with glazed cherries.

FROM THE BARTENDER, DAVID BONATESTA

David Bonatesta

David was born and raised in Rome, Italy. At the age of 16, he started working in the restaurant business as a barista and food runner. He had the opportunity to work at the 5-star Hotel De Russie in downtown Rome with bar manager Massimo D’addezio as a barback and bartender.

At 22, he moved to New York City where he discovered his passion for bartending. His first bartending job was at Da Silvano in the West Village. Soon after, he joined The Soho House Family and bartended there for a year and half. Feeling the need for a fine dining experience, he started working at Michelin star Lincoln Restaurant in the upper West Side with Paolo Novello.

In early 2015, he joined the NoMad family. He bartended at both NoMad and restaurant bar, and was thrilled to be working with Leo Robitsheck and his team. In 2018, he flew across the country to open NoMad Downtown LA. After a successful year, David was presented the opportunity to be part of the NoMad Las Vegas opening.  He was thrilled to join the team running the hotel’s bar program.

In 2019, he moved back to the East Coast to work for Jose Andres as the AGM of the 2 Michelin star restaurant Minibar and Barmini in Washington D.C. He moved back to Las Vegas in 2020 and joined the team at LEV Group as the Director of Beverage. He was part of the opening team of Al Solito Posto in Tivoli Village, an elevated Italian concept, and Harlo Steakhouse & Bar in Downtown Summerlin, a fine-dining steakhouse. He oversees the bar program at La Strega Ristorante that falls under the same restaurant group. Currently, he’s incredibly excited to continue to be part of new ventures in Las Vegas with LEV.
